Cinnamon Rolls Recipe

This recipe does not require any yeast or buttermilk.

When I was going through recipes online I found a lot of recipes, all pretty similar. I was in search of a legit good cinnamon rolls recipe that did not require any yeast. All of them required buttermilk and I made them with buttermilk one day and it turned out to be a big mess. Tasted good- but was a big mess. I kind of sat there and thought about it for a second and I literally came up with this recipe on my own. It took me a few hours of thinking really hard and hoping & praying that it would turn out good and to my surprise they turned out AMAZING. All together tasted amazing.

We have Sunday  breakfasts as a family and this is the new addition to Sunday Breakfast. I like to make the actual rolls the night before, put them in the fridge and that way when I wake up exhausted, all I have to worry about is sticking them in the oven and making the frosting. 
They got cut wrong, but they are still so damn delicious

Ingredients-

For the Filling:

* ¾ cup of Brown Sugar
* ¼ cup of Granulated Sugar
* 2 teaspoons of Cinnamon
* 1/8 teaspoon of almond extract (or vanilla extract)
* 1/8 teaspoon of salt
* 1 tablespoon of butter
For the Dough:
* 2 ½ cups of Flour
* 2 tablespoons of Granulated Sugar
* ½ teaspoon of baking soda
* 1¼ teaspoon of baking powder
* ½ teaspoon of Salt
* About ¼-1 cup of condensed milk
* 4 tablespoons of butter

For the Frosting:

* 3 tablespoons of cream cheese
* 2-3 tablespoons of half and half
* 3-4 tablespoons of powdered sugar

Instructions:

Prepare the Filling:

1) Combine brown sugar, granulated sugar, cinnamon, almond extract, and salt with a fork
2) Melt your tablespoon of butter and mix into the mix with a fork until it is crumbly; Set aside
Prepare the Dough:
1) In a separate bowl combine (with a whisk) the flour, sugar, baking soda, baking powder, and salt until well blended.
2) Melt 2 tablespoons of butter and in a separate bowl mix the melted butter and your condensed milk.
3) Slowly mix the condensed mixture into the flour mixture (with a spoon).
**If mixture seems too sticky mix in about a tablespoon of flour.
Prepare the Rolls:
1) Flour the surface you are going to roll out the dough on (I personally use the back of a cookie sheet to keep it even).
2) Ball up the dough and roll it out into a triangle.
3) Brush about a tablespoon of butter on to the top of your rolled out dough.
4) Evenly sprinkle out your filling on top of the rectangle of dough (try to keep a CM away from the edges)
5) Lightly press the filling into the dough (I used a spoon).
6) Starting from one of the small ends, roll up your dough (look at website for an example)
7) Now that your dough is rolled, cut it into the your desired amount of cinnamon rolls (I made 8)
8) Take your baking dish (I used a baking bowl but you can use whatever you desire) and put some butter on a napkin and butter the bottom of the bakeware to prevent sticking
9) Take your first cinnamon roll and place it in the middle of the baking dish- one by one place a cinnamon roll all the way around the middle roll
**Try using dental floss to cut your cinnamon rolls.
At this point, if you are making the rolls for the next morning, you can cover them and place them in the fridge.

Baking Your Cinnamon Rolls:

I baked my cinnamon rolls for 20 minutes at 375 degrees but my oven is VERY HOT, so please keep in mind that oven times may vary.
Prepare the Frosting:
1) Place your cream cheese, half and half, and powdered sugar in a medium sized, sturdy mixing bowl
2) With a handmixer (Cream cheese almost broke my actual mixer) mix all of these ingredients until you have a smooth consistentsy (If too thin add more powdered sugar, if too thick add more half and half).

Finishing Your Cinnamon Rolls:

When your cinnamon rolls are done baking take your frosting and evenly spread it over all the cinnamon rolls, let cool off for about 5-10 minutes and enjoy!

Both the filling & the dough are unique. The almond extract and the condensed milk make a huge difference!
Too much dough at the ends? Trash em or just place them in random spots after you'v'e placed all the rolls in the baking dish.
Was proud of these cinnamon rolls before I even stuck them in the oven! Looking so delicious.
